Sweet Potato Soup with Cinnamon – A Cozy Fall Favorite!
If you love sweet potatoes, you’ll adore this soup! It’s a bit on the sweeter side, but the cinnamon makes it the perfect autumn dish. Since Ella’s recipes are completely plant-based, I sometimes tweak them a bit. For example, this recipe calls for coconut milk, but if you don’t have it on hand, you can easily swap it with regular cream. The flavor will change slightly, as the soup is originally coconut-based, but it’ll still taste amazing!
The whole process, from prep to serving, took me about an hour. However, you can save time by pre-cooking the sweet potatoes the night before and simply blending them with the spices and reheating for a quick meal.
Ingredients for 2 servings:
- 2 sweet potatoes
- 400ml coconut milk
- 200ml water
- 10g fresh cilantro
- 2 teaspoons tamari (soy sauce)
- 2 teaspoons ground paprika
- 2 teaspoons ground cinnamon
- 1 teaspoon apple cider vinegar
- 1 teaspoon mustard seeds
Instructions:
Start by cleaning and peeling the sweet potatoes, then cut them into smaller pieces. Steam the sweet potato chunks. If you don’t have a steamer, you can wrap the sweet potato cubes in aluminum foil, but make sure to poke a few small holes at the top. Place the foil packet in a pot with a bit of water and cook with the lid on.
Let the sweet potatoes steam for about 45 minutes, or until they are perfectly soft.
Once ready, transfer the sweet potatoes to a blender and add all the remaining ingredients. Be careful with the water—it’s best to add it gradually, depending on how thick you want the soup to be.
Blend everything until smooth, then pour the soup into a saucepan and gently heat it up. There’s no need to boil it, just warm it through.
Serve with fresh bread or toasted slices. It’s also delicious with garlic croutons.
