Do You Love Avocados as Much as I Do? Here’s a Delicious Recipe You’ll Enjoy! 🥑
I can eat avocados in any form – on toast, in a salad, or as a dip. They’re just so versatile!
This recipe comes from the book Deliciously Ella with Friends by Ella Woodward, who you might know as Deliciously Ella. You should definitely check out her Instagram or download her app (available on Google Play and App Store), where you’ll find not only amazing recipes but also yoga classes. I received her first cookbook as a gift, and since then, I’ve collected all her books. I was even lucky enough to visit her café in London! While I’m not on any special diet and can’t imagine life without a good steak, I do enjoy a plant-based meal now and then.

I’ve made a few tweaks to the original recipe, as I found some of the ingredient ratios a bit off. The result is still delicious and surprisingly filling. The recipe is written for 2 servings, but it’s easy to adjust for one. Alternatively, you can serve it as a side dish, where it comfortably feeds up to 4 people.
The whole process, from preparing the ingredients to serving, took me about half an hour.
Ingredients for 2 servings:
- 2 ripe avocados
- 100g cherry tomatoes + a few extra
(around 150g total) - 2 cloves of garlic, crushed
- 3 teaspoons sesame oil
- Olive oil
- Salt and pepper
- 2 teaspoons sesame seeds
- Juice of 1 lime
- A small handful of fresh cilantro
Preheat your oven to 200°C (180°C for a fan oven). If you have an air fryer, feel free to use it – I personally prefer it when making just one portion, as it saves me from heating the whole oven. 😉
Cut the avocados in half and remove the pits. Use a spoon to widen the pit hole by scooping out a bit of the flesh (you can eat this right away, as you won’t need it for the recipe).
Chop the tomatoes (save a few for later) and mix them with the pressed garlic, one teaspoon of sesame oil, a drizzle of olive oil, salt, and pepper.
Place the avocado halves on a baking sheet. To keep them stable, you can prop them up with some crumpled foil. Divide the tomato mixture evenly between the avocado halves.
If you saved any extra tomatoes, scatter them around the avocados on the baking sheet.
Drizzle everything with olive oil, sprinkle with salt and pepper, and bake for 15-20 minutes.
Transfer the baked avocados to a plate. Sprinkle each half with sesame seeds, drizzle with lime juice and the remaining sesame oil, and finish with fresh cilantro.
I ended up serving this with a slice of fresh bread, but there are countless ways to enjoy these baked avocados. Don’t hesitate to try this recipe and share your experience! 😘
